Hey this is Michael 'Medium Rare' O'Donnell and toay we're going to talk about an important topic and that is how to prevent flare ups from happening while you're grilling. Flare ups can be just absolutely dreadful, and they happen when the oils and fats from your food, drip on to the heat source which ultimately burns your food and just ruins the taste. One of the great ways to prevent flare ups is using the two-zone cooking method. This is especially important if you're cooking on a charcoal grill, move all the charcoal to one side, that way you hae one side with direct heat and another side with indirect heat. That way you can put the food over the indirect heat so that when the grease drops you're not heating the charcoals and causing flare ups. Another way to prevent flare ups, not as good as the two-zone method is just covering up and waiting.The fire needs oxygen flare up so if you just cover the food, close the grill top and that way you can suffocate it, and get those flare ups to go down. When you talk about making smart choices and planning in advance for flare ups, one of the best ways to do that is just cut of the fattier pieces of the meat and that way you're just cooking the leaner pieces of the meat. Fat is one of the most flammable elements and that's what's going to cause a lot of the flare ups. Personally I love the fat, and so I just use the two-zone method but if you're really trying to avoid some flare ups then it's not a bad idea to just cut off the fat and just cook a leaner piece of meat. Another way to steer clear of flare ups is to avoid basting your food in excessive amounts of vegetable oil or marinades prior to grilling. That oil when it drips down is going to cause a lot of flare ups. So if you wait til later on to do your oils and marinades that can also help in avoiding flare ups. Whenever you're grilling, it's important to stay focused, alert and attentive of what's on the grill. If you just look away for a couple of minutes and you get a giant flare up you could risk burning all the food. So always remain alert, and that way when a flare up does occur you can react and save your meal before burns. And just as a regular safety precaution it's always good to have on hand that way you can squirt out the fire if anything happens, it's just safe grilling.
