It was a nice sunny morning in the Pensacola bay area when the Inebriated Wisdom crew rolled up into the historical section of town.  We were looking for a brewery, but not just any one would do.  Pensacola Bay Brewery was our target on this early morning visit.  Making a right on a one way street and pulling up to the front door, we were greeted by an amazing looking building. Not a very big building, mind you, but inside we knew of a crew making some really good beer.   According to the website at www.PBBREW.com, the brewery started about five years ago.  It is literally in the heart of the historical section that gives Pensacola its charm and with that comes a few ‘constraints’ to a business. More precisely it is in the Old Seville Historic District adjacent to Downtown Pensacola. The major issue here is obviously space.  Space is at a premium in most places but with a growing brewery that is packed from floor to ceiling of its 3500 square feet with equipment, it is even more of a luxury.  With the Historical Preservation Society adhering to a very strict no change policy of the exterior, expansion is out of the question too.   With those things in mind and truly just wanting to sample some great beer and make a few new friends we knocked on the door and were greeted by Mark Robertson, Brew Master and Co-founder.  Mark showed us around the taproom where the cozy little space is adorned with a Pirate motif and displays of the artwork from each of their offerings.  Looking at the bar and to the right, there is a glass panel door that leads directly in to the brewery, there lies a 15 Barrel system producing roughly 120 barrels a month currently. As we sat down for a chat with Mark, we were discussing books about the industry and he highly recommends the book Beyond the Pale by Ken Grossman.  I am adding this one to my reading list and I will supply a link on the show notes page if you are interested.  We both grabbed a nice cup of water, because 9am is still too early in my book to drink beer. Taking a quick minute or two to set up the Zoom H5 we use for most of the mobile stuff, we checked recording levels and we were off. Mark’s history before the brewery was quite interesting, his home brewing days in Mississippi were done illegally, but once he was brewing his own beer it was hard for him to look back.  During the interview Mark passed on some very good information both for the new brewers looking to start up their own brewery, and the consumer as well.  Check out the podcast for his quotes on the ideal craft beer customer.   We covered a wide range of topics from finding real estate to how to buy an entire brew house and relocate it across the country in about four days.  Suppliers for his raw material were discussed and his thoughts on not being able to self distribute his products.  We ended the visit with a walkthrough of his brewery and bottling line, which during bottling days would be a good puzzle for any Tetris lover to figure out.   Finally we ventured back into the taproom where we filled our growlers we purchased there the day before with a DeLuna Kolsch and a Treasure Grove Pale Ale.  Both were extremely good and even started converting the hired help I traveled with, who really likes macro commercial tastes.  No names need be mentioned of those brews.  We packed up shortly after and rode off into the noon-day sun in search of our families who were either pool side or playing in the clear waters of Orange Beach back across the line in Alabama.  My thanks go out to Mark for taking time out of his busy day to chat and the wonderful crew of Pensacola Bay Brewery.   We will be back each year around vacation time and I will need to make a special trip to sample the Pumpkin later this fall.  In closing, if you happen to find yourself in or even near Pensacola Florida, make it a must-see mission to stop by and have a pint.  They are open seven days a week so have no fear of them being closed on any particular day.  Enjoy responsibly and tell them Donnie and the Inebriated Wisdom Crew sent you!   Cheers!Donnie  Other Breweries mentioned:MacGuires Pensacola - Steve Free?
