Grace Ann's Chocolate Amaretto Pie
- 1/4 c unsalted butter
- 1/2 c unsweetened cocoa powder
- 1 c unsalted butter, room temp
- 1 1/2 c superfine sugar
- 1/4 c amaretto liqueur
- 4 Pasteurized eggs, room temp (please note this recipe includes raw eggs and that holds some risk for some people.)
- 1 9" deep-dish pie crust, baked
- Melt 1/4 c butter in small saucepan.
- Remove from heat & stir in cocoa powder
- Cream 1 c butter with sugar & amaretto in large electric mixer
- Gradually beat cocoa mixture in.
- Add eggs one at a time, beating for 3 minutes after each addition.
- Continue beating until sugar is completely dissolved.
- Pour into crust
- Cover & refrigerate until firm, about 4 hours.
